Breakfast "muffins"
I decided to try something new for breakfast today. I've seen this thing around the internet, and thought I'd give it a shot. It's breakfast "muffins", which is basically a piece of bread in the bottom of a muffin tin, with bacon wrapped around the edges and an egg in the middle, then baked in the oven.
It was super easy, and a fun change for a breakfast!

As I had nothing planned for today, I decided to go to Emporia, which is a large shopping centre in Malmö, to buy a few things that I needed:
Maybe it's a bit odd, but I enjoy going shopping on my own. I can look around in my own pace and I don't have to worry about anyone else but me. I can think about an item as long as I need before I buy it. It sounds now like I'm a really slow shopper, which I am not, but having others with me still makes me stressed and If I happen to think about buying something for a while, I don't want anyone to have to wait for me.

Feeling good
Today became some sort of "take care of myself"-day. First i went on a long walk with Zigge, then later I went on a run. After I'd showered, I treated my hands and my feet. My feet because they're dry, and my hands because I've realized that I bite my nails less if I take care of my hands.
I use lotions from "soap & glory". I have several of their products, and in my experience they are really good and always smell nice.

De'Longhi
During the week that we spent in the cabin, I sort of created a mini café. I had brought my espresso machine, caramel syrup and chai powder to be able to make a couple of different drinks, and I managed to teach my sister Louise to appreciate coffee.
The machine is a De'Longhi Icona ECO 310. I bought it cheap on ebay, and I am so happy with it. As with all machines, it takes a little while to get used to it, and you need to experiment a bit with the steamer and the amount of coffee you use. Personally I think it's a lot of fun to play around with it.

Steak and wine
We decided to eat out last night, and try out what Örkelljunga has to offer. Turns out they pretty much have one restaurant in this little town, and even though it was a combined video store and restaurant (classy, I know...) it was actually pretty decent. The staff was really friendly, and the steak was delicious!
Mum and I had wine.

Our puppies!
It's been so nice to spend time with both of the dogs this week. They're so full of energy and there's always something going on with them :)
One thing they are both lousy at, is hiding how badly they want our food when we're at the table. They're not begging, but they are looking at the food very intensely.

Salmon en Croute
Still relaxing with the family in the cabin! The weather has been strange today. It hasn't been very warm, and it's been raining a couple of times, so we've been spending most of the day indoors.
It was my turn to cook dinner today, so I made some delicious Salmon en croute! It's a fairly impressive dish to serve, however it's super easy to make. I found the recipe HERE.
I've started to enjoy cooking a lot more lately, and often find myself looking for new interesting recopies when browsing the internet. Hopefully, there will be more of that in my blog soon!
